Chicken hash Looks pretty unpleasant, but tastes pretty good. Slice up a pack of chicken Italian sausages. Dice up about a pound of boneless chicken thigh meat. Fry this all up in olive oil & salt. Remove from pan. Dice up an onion & a large potato along with a clove or so if garlic. Drizzle in some olive oil into the chicken drippings and fry this up. When it got too dry and wanted to burn I'd add in a little broth to keep it wet. Chicken broth would probably be good but all I had was vegetable broth. That worked fine. Near the end, chop up a small handful of pickled jalapeƱo peppers and toss 'em in with maybe 1/4 tsp of sage. When the spuds are cooked to tenderness, add the chicken meat back in and you're done.
