Porkchops 3-4-3 About 3/4" thick, BONE IN chops. Start oven warming to 400 deg. Coat chops in olive oil. Add small sprinkle of salt Get pan piping hot. Drop in chops let them fry UNTOUCHED for 3 minutes (timed) Flip Em! Put UNCOVERED pan in oven for 4 minutes. Pull 'em out let them rest for 3 minutes. OPTIONAL Pour the resulting juice back into the frying pan as a base for your gravy. Milk, flour, salt, pepper and maybe a pinch of sage? Possibly start with frying some onions in this? Have fun with it! Note : One onion is about twice as much onion as one person can eat.
