Chicken pot pie Spatchcock a young chicken. Chop up.. 1 sprig celery 1 small peeled potato 1 small/med onion 1 box mushrooms Dump all this in medium/large fry pan Add 3/4 pack frozen peas n carrots. Get the roasting pan the chicken was baked over, boil water in this and scrape up all the drippings. Pour the drippings into the pan of chopped veg. Get this boiling on the stove. Add salt n pepper to taste. Tear all the meat you can get off the chicken and set aside. Once all the veggies are done, add about 1/4 cup of half/half to the mix. Return it to boiling and add some flour as thickener. The end result should be the consistency of thick gravy. Grab pie pan and box of pre made pie crust. One on bottom pie pan. Chop/tear chicken meat into bite size pieces. Dump them into the pie pan over the bottom crust. Dump the veggie mix over this, working it into the chicken with the wooden paddle. Add top crust, crimp edges, bake 450 for.. 15-20 minutes. Keep an eye on it all you need to do is bake the crust and get the color on it that you want. Everything inside is fully cooked already. Let it cool for 1/2 hour after baking. Enjoy!
