Boiling beans ********** Final ********** The night before.. Do the brining beans thing. This gives 2 cups (When dry) of ready to cook pink beans. Drain and rinse the beans Chop up 1 boneless pork spare rib. (1/2 lb) Sprinkle a little salt on it. Get the pot heating up dry Add.. 1 tsp chili powder. 1/2 tsp cumin. 1 1/2 tsp salt 20 twists of pepper grinder. Heat 'till you can tell the stuff is getting hot and you can smell it just starting to bake. Now add in the olive oil. When it gets hot.. Add 1 onion chopped up. Fry 'till getting clear. Now add in the chopped up pork and brown it. Once all the pork, onions etc are done. Add two large crushed cloves of garlic. Let them heat for a minute. Now, Add 2 qt of water. With the drained and rinsed beans. Add a 3 bay leaves. Bring to a boil, cover, reduce to low and simmer for 1 1/2 hour. Chop up 3 strips of bacon into a large saucepan. Get this frying up. Add : 1 tsp chili powder. 1/2 tsp cumin 1 1/2 tsp salt 1/2 onion chopped up. Once all the bacon, onions etc are fried.. Deglaze the pot with a little water. Add about two med..large crushed cloves of garlic. Let them heat for a minute. Now, Add 2 qt of water. AND 3 Bay leaves. Drain and rinse the brined beans, then pour them into the pot. Bring to a boil, cover, reduce to low and simmer for 1 1/2 hour. NOTE: For a change, once everything is fried up, add about 1/2 pork tenderloin chopped into bite sized pieces. Brown this then continue on. AND 2 Bay leafs, maybe even three. Drain and rinse the brined beans, then pour them into the pot. Add salt 'till the liquid is about the same saltiness as soup. (2 tsp) Bring to a boil, cover, reduce to low and simmer for 1 1/2 hour. NOTE ON SALT : If you plan on boiling these down to eat direct. Cut the salt down to 1 tsp. Then salt to taste at the end. Making these to drain then add to other dishes, you can keep it at 2 tsp.
